Ingredients

  • 2 cups chopped cooked ham
  • 1 cup chopped red bell pepper
  • 1/2 cup chopped green onions (8 medium)
  • 2 cups shredded cheese (8 oz)
  • 10 flour tortillas for burritos
  • 6 eggs
  • 2 cups half/half
  • 1 tbsp. flour
  • 1/2 tsp. salt

Preparation

Step 1

Spray 13x9" pan.
Combine ham, peppers, onions, and 1 cup cheese. Place 1/3 cup mixture down each tortilla. Roll up and put into pan. Beat eggs, half/half, flour, and salt. Pour over tortillas. Cover and refrigerate at least 8 hours. Sprinkle with remaining cheese Bake covered at 350 for 25 minutes. Uncover. Bake 10 more minutes.
