  • Huckleberry Bars:
  • 1/2 cup margarine
  • 2 cups sifted flour
  • 2 cups huckleberries
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 tsp salt
  • 1 1/2 cups sugar
  • 2 tsp baking powder
  • 1 cup chopped nuts
  • Cream Cheese Frosting:
  • 2 tbsp butter or margarine
  • 1 tbsp cream
  • 1/2 package (4 ounce size) cream cheese, at room temperature
  • 2 1/2 to 3 cups powdered sugar

Step 1

Huckleberry Bars: Melt margarine, remove from heat. Stir in sugar and cool slightly. Add eggs and vanilla, beat well. Combine dry ingredients, blend into egg mixture. Add nuts. Stir in huckleberries. Spread batter in greased 9-by-13-inch pan. Bake 35 minutes at 350 F. Cool. Frost with Cream Cheese Frosting. Cut into 2-inch squares.

Cream Cheese Frosting: In mixing bowl, combine butter, cream and cream cheese. Microwave at medium power about 1 minute, or until warm. Blend well. Beat in sugar until spreading consistency. If necessary, thin with a few drops of cream. Frosts 13-by-9-inch or two-layer cake.
