Ingredients

  • 1 lb ground chicken meat
  • 1 tablespoon honey
  • 1 egg
  • 1 tsp dried thyme
  • 1/2 cup breadcrumbs
  • 2 tsp onion powder
  • 1 tablespoon smoked paprika
  • 2 fresh sage leaves - very finely chopped
  • 1 tsp dried oregano
  • salt (to taste)
  • fresh ground pepper (to taste)
  • 1/4 cup chicken broth
  • 1 1/2 tablesoon minced garlic
  • 1/3 cup extra virgin olive oil

Step 1

1. Pre-heat oven to 325 degrees 2. Combine half of the olive oil and all other ingredients in a large mixing bowl - use hands to combine thoroughly and shape into meatballs (each meatball should be approx 1.5 inches in diameter 3. Heat up large sauce pan with remaining olive oil - adjust heat to medium/low 4. Saute all meatballs in pan for approx 3 minutes, making sure to brown them evenly (leave meatballs slightly rare) 5. Line meatballs on non-stick baking sheet - bake for 5-8 minutes. 6. Remove meatballs, cool. Enjoy as is, or combine with favorite pasta/veggies
