Ingredients
- 3 1/2 cups vegetable of chicken broth
- 3/4 cups pearl barley
- 2 tbs olive oil
- 1 medium onion cut into 1/4 inch, diced
- 2 small zucchini, cut into 1 inch chuncks
- 10 oz mushrooms, cut in half
- 1 tsp salt
- 1 tsp dried oregano
- 1 medium head cauliflower
- 2 medium carrots
- 9 oz frozen green beans
- 1 can black beans, rinsed
- 1/2 cup green olives, chopped

Step 1
1. In 4 qt saucepan, heat broth, barley, and 2 cups of water to boiling over high heat. Reduce heat to low, cover and simmer 1 hour.
2. Coat vegetables with olive oil, salt, and pepper, in plastic bag. Roast vegetables in oven at 425 for 20-30 min.
3. Mix barley, vegetables, beans, and olives together.
