Ingredients
- 4 sprays oil,divided
- 2 med.sweet red peppers,cut into 8 thick strips
- 1 med.green pepper,cut into 8 thick strips
- 1 med.summer squash,cut thickly on the diagonal
- 1 med zucchini,cut thickly on the dia gonal
- 1 med.red onion,cut into lg.wedges
- 375 ml (12 oz) canned artichoke hearts,without oil,draine
- 1 tbsp fresh thyme,minced
- 1/2 tsp salt
- 1/4 freshly ground black pepper

Step 1
Preheat oven to 450F.Coat 2 lg.baking
sheets with cooking oil.Arrange peppers,squash,zucchini,onion,and artichokes with cooking spray;sprinkle with thyme,salt,and black peppers.Roast
until vegetables are tender and golden brown,shake about 25-30 min.Yields about 3/4 cup per serving.
