Ingredients

  • 1 cut up chicken or 3 whole chicken breasts
  • 1 medium green pepper, chopped
  • 1 medium red pepper,chopped
  • 1 medium onion, chopped
  • 3 Tbs butter
  • 1 can cream of mushroom soup, undiluted
  • 1 can cream of chicken soup, undiluted
  • 1 Tbs chilli powder
  • 1-2 tsp ground cumin
  • 1/2 tsp oregano
  • 1-10oz can diced tomatoes with green chilies (Rotel)
  • 1 cup chicken broth
  • 2 Tbs sour cream
  • 4 Tbs picante sauce (hot)
  • 1 dozen corn tortillas
  • 3/4 cup grated cheddar cheese

Preparation

Step 1

Simmer chicken in salted water for 1/2 hour. Reserve stock. Bone and dice chicken, set aside. Saute green and red pepper and onion in butter, about 2 min. Remove from heat and add mushroom soup, chicken soup, diced tomatoes, chicken broth, sour cream, cumin, chili powder, tomatoes, picante sauce and oregano. Mix well. Dip 1/2 of the tortillas in the reserved stock, and line the bottom and sides of a 3-quart casserole. Next layer 1/2 of the diced chicken and 1/2 of the soup mixture. Repeat layers and top with the grated cheese. Bake in preheated 350 oven for 45 minutes. Serve immediately with additional picante sauce.
