Huckleberry Bars

Ingredients
- 3 cups huckleberries, washed and drained
- 2/3 cup water
- 2 tsp lemon juice
- 2 1/2 cups sugar
- 3 tbsp cornstarch
- 1 cup all-purpose flour
- 1 cup quick-cooking oats
- 2/3 cup brown sugar, packed
- 1/4 tsp baking soda
- 1/2 cup butter

Step 1
Preheat oven to 350 F. In a small saucepan mix sugar and cornstarch together. Add 1/3 cup of water and lemon juice slowly to it, making sure you have a smooth paste. Slowly add the rest of the water. Add huckleberries.
Over medium heat bring to a boil and simmer until thickened, stirring constantly. Remove from heat and cool.
In a mixing bowl combine flour, oats, brown sugar and baking soda.
Cut in butter till mixture resembles coarse crumbs.
Spray with cooking spray an 8-by-8-inch pan. Press in flour mixture to cover bottom of pan, saving enough of the remaining mixture for the topping.
Spread huckleberry filling on top. Cover with remaining flour mixture.
Bake 30 to 35 minutes or till the top is golden brown. Cool in the pan. Cut into bars.
