Ingredients
- 2 lb. crumbled Berkshire Blue from Berkshire Cheese Company
- 1 cup dry white wine (Pinot Grigio, Sauvignon Blanc)
- 2 cups dry sherry
- ground pepper
- 1 pound French bread cut into 1" pieces

Preparation
Step 1
Rub the inside of the fondue pot with garlic. Pour in the white wine, and bring it almost to a boil. Add the cheese, stir continuously with a wooden spoon. When the mixture almost reaches boiling point. Continue to stir, adding pepper. Transfer the fondue pot to the burner.
Serve the bread separately. Using a fork, dip the bread into the fondue.
