- 2-3/4 medium cucumbers, peeled, halved, seeded and sliced
- 1/3 cup red wine vinegar
- 2 tablespoons and 2 teaspoons olive oil
- 1/3 cup minced fresh mint
- 2 tablespoons and 2 teaspoons minced fresh parsley
- 1 tablespoon and 1 teaspoon sugar
- 1-1/4 teaspoons grated orange peel
