Ingredients
- 1/2 c. chopped onions
- 2 garlic clives, minced
- 1/2 c. chopped celery
- 1/4 c. best quality olive oil
- 2 (20 oz.) can undrained Itallian plum tomatoes, chopped
- 2 (12oz.) cans tomato paste
- 1 T. salt
- 2 t. sugar
- 1 T. chopped fressh oregano or 1 t. dried
- 1/4 t. pepper
- 1/2 c. chopped parsley
- 1/2 c. freshly grated Parmesan or Romano cheese
- 2 c. Mushrooms, sliced and sauteed
- 1 1/2 lbs. Italian sausage, cooked, drained, and seasoned
- 1/2 lb. ground beef, cooked, drained, and seasoned

Preparation
Step 1
Saute onion, garlic, and celery in oil. Add tomatoes, tomato paste, salt , sugar, oregano, salt, pepper, parsley, and cheese. (Add water or white wine if sauce is too thick). Cover and simmer 1 hour. Add mushrooms and meat and simmer 30 minutes.
