Sour Cream Mushroom Quiche

Note: Use a deep dish pie dish for this recipe such as Temptations.

- Custard:
- 3 tablespoons butter
- 2 tablespoons olive oil
- 1 small sweet onion, thinly sliced and halved
- 1-2 shallots, chopped
- 1/2 pound mushrooms (any variety)
- 2 tablespoons dry sherry
- Sharp white cheddar cheese
- Shredded cheddar jack cheese
- 1-1/2 cups sour cream
- 3 eggs
- Freshly ground pepper
- Pinch cayenne pepper
- 1 deep dish pie crust

Preparation
Step 1
Heat oven to 375 degrees.
Add butter and olive oil to a large skillet over high heat. When butter has melted add onions and shallots and cook until carmelized. Add mushrooms and saute over high heat until they have released all moisture, about 10 minutes. Cool slightly. Add sherry and continue cooking until all moisture has evaporated.
For custard, beat all ingredients together until well blended
Spread cooked mushrooms in prepared pie crust. Cover with a thin layer of white cheddar cheese. Cover with custard. Bake for 40-50 minutes. When custard is almost set sprinkle with cheddar jack cheese. Bake until lightly browned and custard is completely set. Rest quiche for 5 minutes before cutting.
