Hola,amigos! In an earlier episode of Breaking Bad, Jesse was making breakfast for Jane. What initially looked like fried eggs turned out to be a pretty scrumptious spread which he modestly called "huevos rancheros". Huevos rancheros, or 'ranchers eggs', is a hearty hodge-podge of cheery sunny-side ups and fiery chilli-tomato salsa, honestly distributed atop a toasty corn tortilla bed coated with a traditional layer of fragrant frijoles refritos. This classic Mexican morning booster is bursting with the warm, sunny rusticity that Mexico oozes, and is perfect for anytime of the day. This dish is the Doctor Martens of the dining table - rugged, tart and guaranteed to please. So what's not to love? If a methhead can whip this up in the name of love, so can you. Ingredients

  • Olive Oil
  • 1/2 cup of Chopped Onion
  • 3 Cloves of Minced Garlic
  • 14.5 oz of canned diced tomatoes
  • 2 Chopped Canned Chipotle Chiles in Adobo Sauce + 1 tsp of Adobo Sauce (to taste)
  • Pinch or two of Ground Cumin (to taste)
  • 2 tsp of Sugar
  • Pinch of Salt & Black Pepper (to taste)
  • 2 - 3 Corn Tortillas
  • Refried Beans (for spreading)
  • 4 - 6 Large eggs
  • Pinch of Cayenne Pepper (for garnishing)
  • Cilantro (for garnishing)

Preparation

Step 1

1. To make tomato-chili sauce, heat a little olive oil in a pan over medium heat. Add in chopped onions and cook for a few minutes until translucent. Followed by adding in minced garlic and fry till aromatic for about 1 minute. Stir in the tomatoes and its juices followed by chopped chipotle chiles, adobo sauce and ground cumin. Allow it to simmer for 10 minutes over low heat. Season with sugar, salt and pepper to taste.
2. Prepare the tortillas by first heating a little oil in a large skillet over moderate heat. Swirl the skillet to evenly coat the pan with oil. Place one tortilla in and cook for about 1 minute on each side until softened and slightly puffy. Remove and continue to cook the rest. When the tortillas are cool enough to touch, spread a layer of refried beans on them.
3. For sunny side up eggs, add oil into a small nonstick pan over low heat, preferably one with a rounded side for easy removal after cooking. This is how we cook our sunny side up eggs, which will involve a bit more oil than the usual method. When the oil is slightly hot, crack an egg into the pan and cook till it begins to turn white. Gently tilt the pan to collect some oil at the bottom with a spatula or spoon. Spoon it over the egg whites to cook the surface. Transfer the eggs onto the tortillas.
4. Spoon tomato-chili sauce on the side of the tortilla. Sprinkle cayenne pepper and black pepper over eggs and sauce. Garnish with chopped cilantro. Serve immediately!
