Hawaiian Luau Pineapple Cookies

Yummy pineapple and coconut cookies.... like your own little luau without the trip to Hawaii!

Ingredients

• 1 cup butter
• 1 cup sugar
• 1 cup brown sugar
• 2 eggs
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 4 cups flour
• 1/2 teaspoon salt
• 1 teaspoon vanilla
• 1 1/2 cup walnuts chopped fine
• 1 can crushed pineapple, well drained, 20 oz can
• 1 teaspoon pineapple juice
• 1/4 cup coconut
• 1 teaspoon coconut extract

Preparation

Step 1

Cream butter and sugars.

add eggs and blend into creamed sugar

Sift together dry ingredients and add to creamed mixture.

Then add vanilla, pineapple extract,nuts and crushed pineapple

Drop by spoonfuls onto parchment lined cookie sheet and

Bake at 350° F for 12-14 min (depending on oven, it may take longer) up to 16 minutes.
