Ingredients
- 1 Tbsp. olive oil
- 1 Tbsp. all-purpose flour
- 1/4 tsp. ground black pepper
- 1 pound skinless, boneless chicken breast halves, cut into 1-inch chunks
- 1 medium onion, chopped
- 1 can (14 1/2 ounces) chicken broth
- 1/4 cup bottled honey-Dijon mustard

Preparation
Step 1
In 12-inch skillet, heat oil over medium-high heat until very hot. In medium bowl, combine flour and pepper; add chicken and toss to coat.
Place chicken in skillet and cook, stirring frequently, until it just loses its pink color throughout, 4 to 6 minutes. Transfer chicken to plate.
Reduce heat to medium. Add onion to skillet and cook, stirring occasionally, until browned, 3 to 4 minutes. Transfer to plate with chicken.
Increase heat to high. Add broth to skillet: cook until sauce has thickened slightly, 6 to 8 minutes. With wire whisk, whisk in mustard. Return chicken and onion to skillet; heat through.
