Ingredients
- 1 T maple syrup or brown sugar
- 2 T red wine vinegar
- 1 T extra virgin olive oil
- 1/4 tsp. salt
- Ground pepper to taste
- 3 c. baby spinach
- 3 c. watercress (stems removed)
- 2 1/2 c. sliced strawberries
- 1/3 c. fresh chives
- 1/2 c. toasted pecans
- 1/4 c. crumbled goat cheese

Step 1
Whisk maple syrup (or brown sugar), oil, vinegar, salt and pepper in large bowl. Add spinach, watercress, strawberries and chives. Toss to coat. Divide the salad among 4 plates and top with pecans and goat cheese.
To toast pecans:
stir constantly in a small dry skillet over medium heat until lightly browned (about 2-4 minutes)
