Ingredients

  • Batter and Filling:
  • 1/4 cup shortening
  • 1 1/4 cups sugar
  • 2 eggs
  • 2 cups sifted flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 3/4 cup milk
  • 1 1/2 tsp vanilla
  • 1 tbsp grated orange rind, optional
  • 1 to 1 1/2 cups huckleberries, fresh or frozen
  • Crumble Topping:
  • 1/2 cup sugar
  • 1/2 cup flour
  • 1/2 tsp cinnamon
  • 1/4 cup butter

Step 1

For batter, cream shortening and sugar. Beat in eggs one at a time. Sift dry ingredients. Add to creamed mixture alternating with milk, blending after each addition. Stir in vanilla and orange rind. Fold in berries. Pour batter into greased 9-inch square pan.

To make crumble, combine all ingredients and mix until crumbly. Sprinkle over batter in pan. Bake at 350 F for about 45 minutes, or until toothpick inserted into cake comes out clean.
