Pumpkin Bread - Microwave Recipe

- 1 3/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking soda
- 3/4 tsp salt
- 1/4 tsp baking powder
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- 1 cup plain canned pumpkin
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup water
- 1 cup finely snipped dates
- 1 cup chopped walnuts

Grease a 9-by-5-by-3-inch baking dish.
In a medium sized bowl thoroughly mix the flour, sugar, baking soda, salt, baking powder and spices. In a large bowl mix pumpkin, eggs, oil and water. Add flour mixture to pumpkin mixture and stir just until blended and smooth. Stir in dates and nuts. Put batter into prepared baking dish. Cook about 24 minutes on medium, giving dish a quarter turn every 5 minutes and shielding corners with triangles of aluminum foil (IN A MICROWAVE????). Bread is done when top is dry and cake tester inserted in center comes out clean. Let stand 15 minutes before turning out.
