Huckleberry Zucchini Bread

• 3 eggs
• 1 cup oil
• 2 cups sugar
• 3 tsp vanilla
• 1 1/2 cups grated zucchini
• 1 1/2 cups huckleberries
• 3 cups flour
• 1 tbsp cinnamon
• 1 tsp salt
• 1 tsp baking soda

Step 1

Mix eggs and oil. Stir in sugar, vanilla, zucchini and huckleberries. Blend in flour, cinnamon, salt and soda. Spread into two greased loaf pans. Bake one hour at 350 F.
