  • 2 lbs. of venison
  • 8-10 oz. of fat bacon
  • garlic
  • juniper berries
  • coriander seeds
  • black pepper
  • very little salt
  • red wine

Preparation

Step 1

Cut the venison and the bacon into slices. Put into a deep earthenware pot, add half a dozen each of crushed juniper berries and coriander seeds, a fair amount of ground black pepper and a very little salt. Just cover the meat with coarse red wine, put a lid on the pot and cook in the lowest possible oven for at least 3 hours.

When cold, chop the venison and bacon fairly finely, press into small pots, and seal with clarified butter or dripping.
