Ingredients

  • 1 15-oz. can pumpkin
  • 1 cup vegetable oil
  • 4 eggs
  • 2/3 cup water
  • 3-1/2 cups flour
  • 3 cups sugar
  • 2 tsp. baking soda
  • 1-1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. ground nutmeg

Step 1

Combine the pumpkin, vegetable oil, eggs, and water into a KitchenAid mixer bowl. Add paddle attachment and blend on low speed until well mixed. In a separate bowl, mix flour, sugar, baking soda, salt, cinnamon, and nutmeg. Gradually add small amounts of flour mixture to the wet pumpkin mixture until all of the flour mixture is well mixed. Pour the batter into 3 lightly greased and floured regular-size loaf pans, or 4 – 5 mini pans. Bake at 350°F for 1 hour or until done for large loaves, and for 45 minutes or until done for mini loaves.

Note: Add mini chocolate chips or pecans to the recipe for a different flavor.
