Ingredients

  • 1 teaspoon chili powder
  • 1 /.2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground red pepper
  • 6 skinned chicken breast halves
  • Vegetable cooking spray
  • 1 teaspoon vegetable oil
  • 1 can whole tomatoes undrained and chopped
  • 1/2 cup diced green onions
  • 1 teaspoon seeded and chopped jalapeno pepper
  • 2 teaspoons cornstarch
  • 2 tablespoons water

Preparation

Step 1

Combine first 5 ingredients, sprinkle over chicken. Coat skillet with cooking spray, add oil. Place over medium heat until hot. Add chicken, cook 2 minutes on each side or until browned. Add tomatoes, green onions and jalapeno pepper. bring to boil, cover educe heat and simmer 20 minutes until chicken is tender. Transfer chicken ot a serving platter, using slotted spoon. Combine cornstarch and water, stir well. Add tomato mixture to skillet, bring to boil. Cook, stirring constantly, 1 minute or until slightly thickened. Spoon over chicken.
