Ingredients
- 1 (16oz) package elbow macaroni noodles
- 4 medium carrots, shredded
- 1 large red pepper, chopped
- 1 jalapeno, minced
- 1 medium red onion, chopped
- 2 cups fat-free mayonnaise
- 1 (14oz) can fat-free sweetened condensed milk
- 1 cup sugar
- 1 cup cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon pepper

Preparation
Step 1
1. Cook macaroni according to the directions; drain and rinse in cold water.
2. In a big bowl, combine the macaroni, carrots, red pepper, jalapeno, and onion.
3. In a small bowl, whisk the mayonnaise, milk, sugar, vinegar, salt and pepper until smooth.
4. Pour over macaroni mixture and toss to coat.
5. Cover and refrigerate overnight. You can serve it up with Pulled Pork. It works great!
