Ingredients

  • 2 qt. spinach, washed and torn into bite-size pieces
  • 3 kiwi fruit, peeled and sliced
  • 1 large tomato, cut into thin wedges
  • 1 c. red onion slices
  • 1 c. crumbled feta cheese
  • 1 c. croutons
  • 1/3 c. olive oil
  • 1/4 c. dill or white wine vinegar
  • 1 Tbsp. dijon mustard
  • 1 clove garlic, minced or pressed
  • 1/2 tsp. dried dill weed
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Preparation

Step 1

Place spinach, kiwi, tomato, onion, and cheese in a serving bowl. In a medium mixing bowl, whisk together oil, vinegar, mustard, garlic, dill, salt and pepper. Pour over salad and toss. Top with croutons before serving.
