Ingredients

  • 2 pounds boneless chicken breasts
  • 1 cup whole wheat Italian bread crumbs
  • 6 Tbsp parmesan cheese, divided
  • 5 oz fresh baby spinach
  • 1 clove garlic, minced
  • olive oil for sauteing
  • 1/2 cup ricotta cheese
  • 1/3 cup beaten egg whites
  • 3 oz fresh mozzarella cheese, sliced thin
  • 1 cup marinara sauce
  • fresh basil

Preparation

Step 1

Preheat oven to 450 degrees

Cut chicken into 8 pieces and pound thin.

Place bread crumbs in bowl with parmesan cheese and set aside.

Chop spinach and saute with garlic in olive oil for about 2-3 minutes until barely wilted. Combine with ricotta, parmesan cheese and 2-3 Tbsp egg whites.

Put remaining egg whites in shallow bowl and set aside. Prepare baking dish.

Put spoonful of cheese mixture into center of chicken and roll up so edges form seam. dip in egg whites and roll in bread crumbs. Place seam side down in pan. Bake 25 minutes

Then, cover chicken with mozzarella, marinara sauce and basil and bake 3-5 minutes longer
