Ingredients

  • ¼ c. orange juice 1 lb. salmon fillet, cut into 4 serving pieces
  • 2 T honey 2 t. canola oil
  • 2 t. soy sauce 1/8 t. salt
  • 1 t. low-sodium soy sauce freshly ground black pepper
  • 1 T lemon juice 4 lemon wedges
  • ¼ t. ground ginger

Preparation

Step 1

Combine the orange juice, honey, soy sauce, lemon juice, and ginger. Reserve 3 T and pour the remaining over the salmon. Let marinate at room temperature 30 minutes.

Heat oven to 450 degrees. Remove salmon from marinade; discard marinade. Pat salmon with paper towels and put into a foil-lined baking dish. Spoon about a tablespoon of the reserved marinade over the salmon and sprinkle with salt and a little pepper. Drizzle with oil. Bake 12 min. per inch of thickness. About halfway through the cooking time, spoon the marinade over the salmon. Test salmon for doneness. Serve with lemon wedges. 4 servings
