Ingredients
- 4 - 5 medium potatoes (red potatoes work well, but any will do)
- 1 medium onion (optional)
- Vegetable oil (enough to fill a large skillet about an inch deep)
- Kosher salt
- Pepper
- 1/4 cup crumbled Gorgonzola cheese

Step 1
Scrub and dry potatoes and peel the onion. Using a mandolin slicer* or a knife, slice the potatoes and onion crosswise as thin as possible. Heat oil until hot.
Carefully lower the potato and onion slices into the oil. Drop them in one at a time, otherwise they'll stick together. Fry them fast, separating each slice and turning often until crisp and golden brown. Remove cooked slices to allow more room in the skillet. Drain well on brown paper or paper towels. Season with salt and pepper to taste. Sprinkle with crumbled Gorgonzola cheese while the fries are still hot.
For less crispy potatoes, slice them a little bit thicker and don't cook them as
