  • 1 T oil
  • 2 T butter
  • 3/4 c chopped onion
  • 3/4 c chopped carrot
  • 3/4 c chopped celery
  • 2/3 c chopped green pepper
  • 1/2 c chopped turnip (small)
  • 3/4 c chopped apple (very small)
  • 1/2 t crushed red pepper
  • 1 t curry powder
  • 6 c chicken stock
  • 1 T cornstarch
  • 1/4 c cold water
  • can tomato paste
  • 2 c diced cooked chicken
  • can of pureed garbanzo beans

Step 1

1. heat oil and butter in saucepan. add chopped veggies and apples, salt, red pepper and curry powder. cook and stir till onions are almost tender.

2. meanwhile, heat stock to boiling point. make a smooth paste of cornstarch and water. add to stock, stir constantly till boils. add sauteed vegetables and rest of ingredients.
