- 1 zucchini, thinly sliced
- 2 small red potatoes, thinly sliced
- 3 plum tomatoes, thinly sliced
- 5 garlic cloves, minced
- extra virgin olive oil (NOTE: Can use garlic-infused EVOO)
- 6 fresh basil leaves, plus more for garnishing
- Salt and pepper
1. Preheat oven to 400 degrees.
2. Brush EVOO on 9x13 baking pan.
3. Layer zucchini, potatoes, and tomatoes.
4. Top with basil, garlic, EVOO, and salt and pepper.
5. Bake for 30 minutes.
6. Garnish with fresh basil.
