Ingredients
- 7-8 lb. Prime Rib Roast
- 2 T. Horseradish sauce
- 2 T. Dijon mustard
- 2 tsp. kosher salt
- 2 tsp. course ground pepper
- 2 tsp. garlic powder
- 2 tsp. dried thyme
- Celery
- Carrots
- Onion

Preparation
Step 1
Mix horseradish sauce and Dijon mustard together,rub all over the roast.
Combine salt, pepper, garlic powder and thyme,sprinkle over the roast.
Cut up celery, carrots and onion and put in the bottom of the roasting pan.
Sear the roast for 30 minutes at 450 degrees and then reduce the oven to 350 degrees and cook for about another 1.5 hours until meat temp reaches 110-115 degrees. Cover with foil and let rest for 30 minutes.
