Crabcakes

Ingredients

  • 1 pound jumbo lump crabmeat, picked over
  • 2 green onions chopped
  • One egg
  • 3/4 cup Panko divided
  • 1/2 cup +1/3 cup mayonnaise divided
  • 1 tablespoon Dijon mustard
  • 3 tablespoons canola oil
  • 1 tablespoon wasabi or horseradish
  • 1 tablespoon chopped parsley
  • 1 teaspoon lemon juice

Preparation

Step 1

In bowl combine the first three ingredients, 1/2 cup Panko 1/2 cup mayonnaise and mustard until just blended. Shape into 4 equal patties.

Place remaining 1/4 cup Panko crumbs on wax paper. Dredge patties in crumbs to coat well. In skillet over medium-high heat cook patties in hot oil 6 minutes, turning once, until golden brown.

Meanwhile, in bowl, combine wasabi , 1/3 cup mayonnaise, parsley and lemon juice.

Serve crabcakes with Wasabi dressing on the side
