Ingredients

  • 3 Tablespoons butter or margarine
  • 6 medium onions (about 1 lb) thinly sliced
  • 6 sups well-seasoned beef broth
  • 3/4 slices french or Italian bread
  • butter or margarine
  • grated parmesan cheese
  • salt & pepper
  • 2 tablespoons brandy or dry sherry (optional)
  • 1/2 cup chopped parsley

Preparation

Step 1

Melt butter in heavy 3-qt saucepan.Add onions and saute stirring occasionally,15 minutes or until onions are tender and golden.Add broth,bring to boil,cover and simmer 45 minutes.Meanwhile spread one side of bread slices with butter,then dip in cheese.Put in baking sheet and bake in preheated 425*F oven 10 to 15 minutes,or until cheese is golden and bread is toasted.Seasion soup with salt & pepper to taste.Add brandy and parsley.Put 1 or 2 toast slices in each soup plate or bowl and pour in soup
