Ingredients

  • Chocolate Coating:
  • 3/4 cup mashed potatoes
  • 1 pkg. (16 oz.) icing sugar
  • 4 cups flaked coconut
  • 1 tsp. almond extract
  • 2 tbsp. soft butter or margarine
  • 2 tbsp. corn syrup
  • 3 tbsp.l water
  • 1 pkg. Betty Crocker chocolate fudge frosting mix

Preparation

Step 1

Mix all ingredients except chocolate coating. Drop by heaping teaspoonful onto waxed paper. Roll into balls. Chill 1 hour until firm. If mixture is too soft to form balls, chill before shaping.

Prepare chocolate coating in double boiler. Using tongs, dip balls in coating, turning to coat evenly. Place balls on waxed paper or wire rack. Chill until firm.
