Ingredients

  • 12 pork tenderloin slices (about 4#)
  • 2 (20oz) cans pie sliced apples, drained
  • 1/2 c brown sugar
  • 6 c herb seasoned stuffing mix
  • 1/2 celery, chopped
  • 1/4 c butter, melted
  • 3 tbs onion, chopped
  • 1 tsp salt
  • 1/2 tsp sage
  • 2 c beef broth

Preparation

Step 1

Pound tenderloin and trim off fat. In large skillet, cook trimmings until 2 tbs of fat are accumulated, discard trimmings. Sprinkle tenderloins with salt and pepper and brown well on both sides. Place in 2 casserole dishes, lightly greased. Combine apples and brown sugar and spoon over meat. Mix stuffing with celery, melted butter, onion,salt and sage, toss with beef broth. Spoon over apples. Bake at 375* for 1 hour. If frozen, bake frozen casserole at 400* for 1 1/4 hours.
