Ingredients
- 12 eggs
- 1 1/2 lb cooked spaghetti
- 1 1/2 lb ricotta cheese, drained of moisture
- 1 cup grated Parmesan or Romano
- salt and pepper
- Oil (be liberal)

Preparation
Step 1
Cook spaghetti. Mix together ricotta, eggs, grated cheese, salt and pepper. Add spaghetti to mixture and mix well. Use a large cast iron frying pan. Heat pan in oil, then add spaghetti mixture. Reduce heat and fry slowly until a good crust forms on the bottom. Turn over, using a large plate; Return to frying pan until a good crust forms on the uncooked side.
