Ingredients
- Salad:
- 4-6 boneless/skinless chicken breast (pound thin)
- 1 cup all purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 2 extra large eggs, beaten
- 1 tbsp water
- 1 1/4 cup dry bread crumbs
- 1/2 cup grated parmesan cheese
- Romaine Lettuse
- Dressing: Lemon Vinaigrette
- whisk together
- 1/4 cup lemon juice
- 1/2 cup quality olive oil
- 1/2 tsp salt
- 1 //4 tsp gound black pepper

Preparation
Step 1
Combine on 3 plates:
Plate 1: flour salt and black pepper
Plate 2: beaten eggs with water
Plate 3: bread crumbs mixed with parmesan cheese
Coat chicken as follows: plate 1, then with plate 2 and last with plate 3.
Heat 1 Tbsp butter and 1 Tbsp olive oil in large saute pan. Cook chicken on medium low heat 2-3 minutes each side. Place in 200 degree oven and repeat with remaining chicken.
