Easy Salsa

Not quite as easy, but even tastier, is this: start with 2 cups finely chopped fresh tomatoes instead of the canned.

Ingredients
- One 14 1/2-ounce can whole peeled tomatoes, undrained
- One 4-ounce can chopped green chiles, undrained
- 1/2 cup sliced scallions (white and green parts)
- 1/2 cups chopped onion
- 1/4 cup chopped fresh cilantro
- 2 Tbs. fresh lime juice
- 2 cloves garlic, minced
- 1/4 tsp. ground cumin
- 1/4 tsp. sugar
- 1/4 tsp. salt, or to taste
- 1/2 cup chopped fresh tomatoes

Preparation
Step 1
1. Place all the ingredients in a blender or food processor. Cover and pulse until finely chopped
2. Let stand at least one hour for the flavors to meld.
VARIATION: Omit the canned chiles and substitue 1 or 2 seeded, diced fresh jalapenos.
