Ingredients

  • Cheese Filling:
  • 1/2 pound mozzarella cheese, diced
  • 2 lbs. Ricotta (or cottage cheese, drained) *Can use mixture of ricotta and cottage cheese, also
  • 2 eggs
  • 1/2 cup Parmesan cheese
  • pepper, salt and parsley (or basil)
  • Homemade spaghetti sauce
  • Manicotti noodles
  • Meat Filling:
  • 1 1/2 pounds cooked ground meat (beef, Italian sausage and veal or mixture of all)
  • 1 egg
  • 1/2 pound mozzarella cheese, diced
  • 3 slices moist bread
  • 1/2 cup milk
  • pepper and salt

Preparation

Step 1

Mix thoroughly. Cook manicotti shells in 4 quarts boiling water for 7 minutes, stirring gently. Drain and rinse with cool water. Stuff. Lay shells in a row in baking dish with 1 cup approximately of sauce in bottom of dish. Pour sauce over manicotti, cover and bake for 25 - 30 minutes in 350 degree oven. Uncover and sprinkle shredded mozarella cheese over top. Continue til melted.
