Ingredients
- 4-5 medium sized peppers
- 1 1/2 cups cooked black beans, rinsed
- 1 cup shredded cheese
- 3/4 cup salsa
- 1/2 cup corn
- 1 cup cooked brown rice
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 pound of cooked ground meat, if desired
- Sour cream, for serving (optional)

Preparation
Step 1
Wash and gut the peppers.
In a large bowl, combine the rice, cheese, beans, salsa, corn, chili powder, and cumin (ground meat if desired). Could also add diced green chilies or jalapeños for heat. Stir.
Stuff peppers with mixture.
Place peppers in crock.
Add ¼ cup of water or chicken broth to the bottom of the crock.
Cover and cook on low for 3-4 hours or until peppers are tender.
