Pecan Butter Balls

Buttery round cookies with Pecan pieces and rolled in confectioner's sugar. This is the base recipe and you can double triple etc. as needed. For the Christmas party I would always make 3 double batches (six times this recipe about 300 cookies).

Ingredients
- 2 Cups flour
- 1/4 Cup sugar
- 1/2 teaspoon salt
- 1 Cup soft NOT runny butter
- 2 teaspoons pure vanilla (not imitation)
- 2 Cups minced pecans* I gauge this, I don’t like that many pecans I use about 1 1/2 cups.

Preparation
Step 1
Sift together
2 Cups flour
¼ Cup sugar
½ teaspoon salt
Add
1 Cup soft NOT runny butter
2 teaspoons pure vanilla (not imitation)
Mix well. I would pour everything into a big sauce pan bigger than any bowl I had and then mix it together with my hands. I soften the butter either by leaving it out on the counter or in the microwave but BE careful so it doesn’t melt to liquid.
When it’s almost all mixed add the pecans.
Add
2 Cups minced pecans* I gauge this, I don’t like that many pecans I use about 1 ½ cups.
Shape into 1 inch balls. I take a finger full and roll in my hands into a ball. Place on ungreased cookie sheet.
Bake in preheated 325 degree oven for 25 minutes or until pale brown. Cool on wire rack.
Makes about 45 cookies per single batch. I make about 270 to 290 for the Christmas party.
