Ingredients

  • 2 tbsp butter
  • 3 eggs
  • 1 cup milk
  • 2 tsp vanilla
  • 3/4 cup all purpose flour
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 2 cups pitted cherries, or any fruit you like

Preparation

Step 1

Preheat oven o 375 degrees. Melt butter in an 8 or 10 inch oven proof baking dish, with deep sides. In a large bowl, beat the eggs with milk and vanilla. Add the flour and salt and sugar. Mix well. Take the baking dish out of the oven and swoosh the melted butter all around, being careful to get the butter on the sides too. Just don't get any on yourself!

Pour the eggy batter into the dish. Arrange your selected fruit on top. Sprinkle with coarse sugar, or granulated, and place back in oven. Bake for 40 minutes, until it's golden and gorgeous. Serves 4-6.
