ENCHILADA PIE
Got this recipe from a What's Cooking magazine.. it was easy and very, very tasty. Brother Darren LOVED it !!

Ingredients
- 1 lb lean ground beef
- 1 chopped onion
- 1 1/2 cups salsa
- 1 TBSP taco seasoning mix
- 1 cup frozen corn
- 1 cup rinsed black beans
- 3 large flour tortillas
- 1 1/2 cups Tex Mex Shredded cheese

Preparation
Step 1
Heat oven to 400 degrees.
Brown meat and onions. Add salso, taco seasoning, corn and beans. Mix well. Cover and simmer 5 minutes.
Place 1 tortilla in deep dish pie plate sprayed with cooking spray. Top with 1/2 of meat mixture and cheese. Repeat twice. Cover with foil that has been sprayed with cooking spray.
Bake 30 minutes - uncover the last 5 minutes. Let stand 5 minutes before serving.
