Balsamic Chicken with Mushrooms

Ingredients
- 2 chicken breasts
- 1/2 tsp seasoned salt + pinch
- 1/4 tsp pepper + pinch
- 1 pkg button mushrooms, sliced
- 1 Tbsp flour
- 2 Tbsp olive oil
- 4-5 cloves garlic, minced
- 1/4 cup balsamic vinegar
- 1/2 cup chicken broth
- 1 bay leaf
- 1/8 tsp dried thyme
- 1/2 Tbsp salted butter

Step 1
Season chicken with a pinch of salt and pepper. Combine flour and remaining salt and pepper and lightly coat chicken with mixture. Add olive oil to a skillet and heat to medium-high. Add chicken and saute each side until browned (~3 mins/side). Add garlic and mushrooms and turn chicken. Cook 3 mins. Add balsamic vinegar, broth, bay leaf, and thyme. Cover and simmer on medium-low for ~10 mins. Remove chicken and keep warm. Simmer sauce uncovered on medium-high for ~7 mins. to thicken. Add butter and remove bay leaf. Pour sauce over chicken to serve.
