Orange Cake

Our family members do not consume very many cakes; however, Jay found this recipe online and it is now a favorite in our home!

Ingredients
- 18.25 oz. box Yellow Cake Mix
- 3.4 oz. package Instant Lemon Pudding Mix
- 3/4 cup + 1/3 cup orange juice
- 1/2 cup vegetable oil
- 4 eggs
- 1 tsp Lemon Extract
- 2/3 cup sugar
- 1/4 cup butter

Step 1
Spray the inside of a 10" Bundt pan with non-stick cooking spray. Preheat the oven to 325 degrees Fahrenheit. In a large bowl, stir together the cake mix and the pudding mix. Make a well in the center of the mixture and add 3/4 cup orange juice, vegetable oil, eggs, and lemon extract. Beat the mixture together using a hand mixer on LOW speed just until blended. Increase the mixer speed to MEDIUM and continue mixing for an additional 2 minutes. Pour the batter into the greased Bundt pan. Bake the cake for 50 - 60 minutes. Remove the pan from the oven and allow the cake to cool in the pan for 10 minutes. Turn the cake onto a wire rack and allow it to cool completely. In a small saucepan, add 1/3 cup orange juice, sugar, and butter. Heat the ingredients over MEDIUM heat for 2 minutes; Drizzle over the cake and serve.
