Ingredients

  • Sauce:
  • 1 Tbs olive oil
  • 1 medium onion
  • 1 bulb garlic
  • 1 green pepper
  • 2-4oz cans mushrooms
  • 66 oz tomato sauce
  • 36 oz tomato paste
  • 32 oz (4 cups) water
  • 8 oz red wine
  • 1-28 oz Cento chefs cut tomatos
  • 1-28 oz Cento all purpose crushed tomatoes
  • 2 bay leaves
  • 2 Tbs garlic powder
  • 1 Tbs sugar
  • 3 tsp parsley
  • 4 Tbs oregano
  • 3 tsp italian seasoning
  • 1 1/2 tsp salt
  • 1 tsp pepper
  • Meatballs-makes 40-46:
  • 3 pounds hamburger
  • 10 eggs
  • 2-8 oz cups bread crumbs
  • 1/3 c Fresh parsley
  • 6 oz grated parmesan cheese

Preparation

Step 1

Sauce:
Dice onion, garlic, green pepper. Cover bottom of large pan with oil and saute. Add mushrooms and remaining ingredients including seasonings. Cover and simmer for 3-4 hours.

Meatballs:
Mix all ingredients together and form into golf ball size meatballs. Add meatballs to sauce, top with 6 oz parmesan cheese. Continue cooking for remainder of the 3-4 hours.

Makes about 5 containers of 3 cups sauce and 7 meatballs and 1 extra bag of meatballs
