- 1 green onion
- 2 tbsp. water
- 1 1/2 tbsp. rice vinegar
- 1/2 tsp. dijon
- 1/2 tsp. EVOO
- 1/4 cup fresh parsley
- 1 tbsp. capers

Step 1
* To prepare sauce:
* In a food processor or blender, combine scallion, parsley, water, rice vinegar, oil and mustard. Process or blend until a chunky purée forms. Transfer to a serving container; stir in capers.
* Preheat grill. Season chicken with salt and pepper; coat lightly with olive oil cooking spray. Grill over medium-hot coals until cooked through, about 6 minutes per side.
* Thinly slice chicken diagonally across the grain and fan on a serving platter covered with lettuce. Drizzle with sauce and serve.
