Ingredients

  • Dressing:
  • 1 1/2 pounds broccoli florets
  • 1 small red onion, sliced into thin strips
  • 1 pound mushrooms, sliced
  • 1 (4.5 ounce) jar pimiento-stuffed olives, drained
  • 1 (3 ounce) can sliced ripe olives, drained
  • 1/2 cup white wine vinegar
  • 1/2 cup extra-virgin olive oil
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1/8 teaspoon salt
  • 1 small clove garlic, crushed

Preparation

Step 1

Place vegetables in large bowl.

Mix dressing ingredients in a jar and shake together or mix in bowl with whisk. Pour over vegetables and gently mix. Marinate at least 2 hours or overnight.
