Ingredients

  • 1 medium onion
  • 3 small tomatoes, cut in 6ths
  • 1 lb. polska kielbasa, cut in bite size chunks
  • 1 Tbsp. margarine
  • 1 Tbsp. cornstarch
  • 1/2 tsp. ground ginger
  • 1 Tbsp. vinegar
  • 1 Tbsp. soy sauce
  • 1/2 c. peach or apricot preserves
  • 2 c. crushed pineapple, drained thoroughly

Preparation

Step 1

Saute onion and sausage in margarine for 5 minutes. Combine cornstarch, ginger, vinegar, soy sauce and preserves. Stir into sausage mixture. Cook over low heat until sauce is thickened. Mix in tomatoes and pineapple. Heat through. Serve over rice or chow mein noodles.
