Ingredients

  • 6 Cups fresh spinach leaves
  • 1 Cup fresh mushrooms, sliced
  • 1/4 C green onions, thinly sliced
  • 3 slices bacon
  • 1/4 C vinegar
  • 2 tsp sugar
  • 2 ml dry mustard 1/2 tsp
  • 1 egg, hard cooked & chopped 1

Step 1




In a large bowl, combine spinach, mushrooms and green onions.

In skillet, cook bacon until crisp. Remove bacon, reserving 2 tablespoons (30 ml) drippings. Crumble bacon and set aside. Stir vinegar, sugar and mustard into drippings. Bring to boiling, remove from heat. Add spinach mixture. Toss mixture in skillet for 30 to 60 seconds or until spinach is wilted.

Transfer mixture to serving dish. Add chopped egg and crumbled bacon. Toss to combine. Serve immediately.
