Ingredients

  • 6 potatoes (about 2 1/2 Lbs)
  • 1/3 cup vinegar,boiling
  • 4 eggs,beaten
  • 1 tablespoon butter
  • 1 cup heavy cream
  • 4 tablespoons finely chopped parsley
  • 2 tablespoons finely chopped onion
  • 1 teaspoon dry mustard
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • Dash of cayenne pepper

Preparation

Step 1

Cook potatoes in skins;peel and slice while steaming hot.Using small whisk,gradually beat vinegar into eggs.Cook,stirring,in top of double boiler over simmering water until thickened.Stir in butter and cook 1 minute.Add cream,2 tablespoons parsley,the onion,mustard,salt,pepper and cayenne.Add to hot potatoes.Cool,sprinkle with remaining parsley and refrigerate until serving time.
