Ingredients
- 1 pound of Italian sausage
- 1 small onion
- 2 boxes good low sodium chicken stock
- 6 med potatoes
- 1 bag of baby spinach
- 1/4 cup half n half or milk

Preparation
Step 1
Saute the sausage and onion and drain off the grease.
Add the stock and let simmer while you peel and dice the potatoes.
Continue to let the potatoes simmer while you clean the spinach.
I always wash and remove the stems of the spinach. Add the spinach and let simmer about 10 minutes until spinach and potatoes are done.
If you think there isn't enough broth, you can always add more stock.
Add the milk or half and half and serve.
Feel free to tweak this recipe to your own liking, I always do.
My hubby prefers this soup without the cream in it so you can always eliminate that step and just add a tad bit to your own bowl when serving. Yummy and quick!
